How we select Australia's finest dining establishments

Food critics evaluating dishes in a restaurant

Our selection process combines rigorous evaluation criteria with extensive expert assessment to identify truly exceptional dining experiences across Australia.

Our team of experienced food critics conducts multiple anonymous visits to each restaurant under consideration. Reservations are made under different names, and all meals are paid for in full to ensure unbiased evaluations. Each critic visits a restaurant at least three times, experiencing different parts of the menu and service at various times to gain a comprehensive understanding of the establishment's consistency and quality.

Restaurants are evaluated on five key criteria: food quality and execution (40%), creativity and distinctiveness (20%), service quality (20%), ambiance and setting (10%), and value proposition (10%). Our scoring system is designed to recognize both technical excellence and the intangible elements that create truly memorable dining experiences. We particularly value restaurants that showcase Australian ingredients and culinary traditions in innovative ways.

Following individual assessments, our panel of critics meets to discuss and debate their findings. This collaborative approach ensures that personal preferences don't unduly influence rankings. The panel includes critics with diverse backgrounds and specialties, including chefs, food historians, and culinary academics, providing multiple perspectives on each establishment's merits. The final list represents a consensus view of Australia's most outstanding dining experiences.

Our list is comprehensively reviewed and updated annually to reflect Australia's dynamic culinary landscape. Restaurants that have previously been recognized must maintain their standards to retain their position, while promising newcomers are evaluated against established benchmarks. This annual review ensures our recommendations remain current and reliable for food enthusiasts seeking exceptional dining experiences across Australia.
